Two Menus, Two Worlds: The Culinary Signature of Andrea Moccia at the Artifex

At the gourmet restaurant Artifex at Feuerstein Nature Family Resort, Executive Chef Andrea Moccia invites his guests on two very special journeys. Two menus that could hardly be more different, yet tell the same story: the story of a chef who has found his very own culinary language between Campania and South Tyrol.

The lightness and emotionality of his Southern Italian roots meet the clarity, authenticity and craftsmanship of Alpine cuisine. From this contrast emerge two tasting menus that offer guests the opportunity to experience enjoyment in different ways: Altitude and World Journey.

Altitude: A Love Letter to the Pflerschtal Valley

Those who choose the Altitude menu embark on a culinary journey of discovery through the mountain landscapes of South Tyrol. This menu is a tribute to the region, its nature, and the people who shape it through their daily work.

Andrea Moccia works closely with small producers and farmers. Whenever possible, the ingredients come from the immediate surroundings. Eggs from Marginterhof in Gossensass, herbs from the Wipptal Valley, vegetables from Pflersch, and meat from the Pfitsch Valley speak of a region rich in quality and diversity.

Yet this is about more than regionality alone. It is about responsibility. About short transport routes. About the respectful use of resources. And about appreciating the people who have nurtured and preserved this cultural landscape for generations.

The dishes are created in rhythm with nature. Andrea is in constant exchange with his producers and draws inspiration from whatever the season has to offer. What grows in the fields today finds its place on the plate tomorrow.

In this way, Altitude becomes more than a menu. It becomes an encounter with South Tyrol itself.

World Journey: Wanderlust on the Plate

While Altitude is deeply rooted in its homeland, World Journey looks beyond borders and out into the wider world.

The menu follows a simple yet poetic idea: “Travel around the world and come back home.”

On his culinary explorations, Andrea Moccia seeks out exceptional products, flavours, and inspirations from across the globe. Yet no matter how far the journey may take him, every dish finds its way back to South Tyrol. A regional element always remains part of the composition, connecting global excellence with local identity.

The dishes tell personal stories. One example is Homarus, Andrea’s signature dish, in which lobster meets the surprising aromatic notes of fermented cherries. Then there is Jacques, a dish centred around scallops that recalls the moment his passion for fine dining was first ignited. Even memories of his childhood find their place on the menu, as in Weiss, a tribute to his mother’s Christmas sauce.

Each course thus becomes a stop on a journey shaped by memories, encounters, and creative curiosity.

What Connects Both Menus

As different as these two paths may be, they lead to the same destination.

At the heart of both lies the product itself. Its origin. Its story. The emotion it carries within. For Andrea Moccia, a dish is only truly successful when it not only impresses on the palate but also leaves something behind: a thought, a feeling, a memory.
